Cinco De Mayo is a celebration held on May 5th observed by Mexicans. The day is dedicated to celebrating their victory against the French in 1862. It is similar to our version of our Independence Day or Fourth of July celebrations.
According to the California Avocado Commission, Americans consume up to 81 million pounds of avocados on Cinco de Mayo every year. Holy guacamole!
For that reason alone, I’m going to share with you the best, simple recipe to make delicious guacamole for Cinco De Mayo.
3 avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
1/2 jalapeno pepper, seeded and minced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced
Step One: In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated.
Step 2: Using a potato masher add the salt, cumin, and cayenne and mash.
Step 3: Then, fold in the onions, jalapeno, tomatoes, cilantro, and garlic.
Step 4: Add 1 tablespoon of the reserved lime juice
Step 5: Add 1 tablespoon of the reserved lime juice
Step 6: Serve with chips!
